Grafting Olive Trees

Massimo Mazzotti, "The flavour of mechanisation," Aeon:
By the 5th century BCE, Thucydides felt he knew what separated civilisation from barbarism: the ability to graft the olive tree.
I'm not aware of any such statement by Thucydides.
